OMG I found this recipe on Facebook the other day and when I saw it, I knew I had to make it. Since it’s meatless, I knew it’d be perfect for the Meatless May challenge. I love guacamole and I love citrus, so I knew I was going to love this. It really is the best guacamole I’ve ever had. It’s pretty messy to make, but it’s absolutely worth the time & mess.

I love pancakes. I have so many memories of my mom making pancakes for my brothers and I when we were younger. I want Landon to have similar memories, so I try my hardest to cook and have him help. One of my favorite kinds of pancakes are banana & chocolate chips. I don’t think I’ve ever had anything better. My favorite thing about this recipe, is it’s semi-homemade. Let’s face it, not everyone has time to make everything from scratch.

Guys, I am totally in love with canning. I have knocked out yet another tasty recipe for my canning challenge and I think you will really like this one. Homemade Pineapple Salsa. Not only is it good with chips, but I also put it on ham and baked it for 30 minutes (it was precooked ham lol). It added just the right amount of sweetness to the ham. Perfect. I want to emphasize the importance of fresh fruit and veggies in the recipe. I truly believe it makes a difference. Your salsa will have a crisp taste. With that being said, I understand that being a mom is stressful enough, so use whatever you have!

I love S’mores. Really though, who doesn’t? With Summer coming soon there will be a lot of S’more making. I remember when Cody and I lived in an apartment complex, we wanted to to buy a fire pit so make S’mores but we didn’t have a backyard. I sure wish I would have known about this tasty treat sooner. These little snacks are made in the oven! The best part is, they’re just sweet enough and big enough to satisfy your craving after just one. Anyways, this is one of my canning challenges because guess what? I put them in canning jars to make them. Well, I’ll stop rambling, like I’m so good at, and let you get cooking!

Another canning recipe is done! Kinda lol. I didn’t actually can this but I did use canned food to make it – so it counts, right? lol Seriously, I used pre-canned items to make this, so I am claiming it ;-)
So this is a recipe for Italian Chicken and Wild Rice in the slow cooker! I love my slow cookers. I received this one to host a Fast Metabolism Mommy Party. After my party, I decided to start the diet. My entire house smells soooo good from this meal today. This recipe serves 6 people with 2 cups each. Remember, this is for my diet, so my intake of food is probably less than others. Anyways, I’ll stop rambling and let you get cooking…

I mastered another canning challenge! This one is probably my favorite though, Vodka Infused Peach Dessert Topping – yum!
I can say honestly, this was probably my most stressful one though because I wanted it to be so good but I was afraid it wasn’t going to. Also, this is the second time I’ve ever canned anything. Anyways, this recipe is best on vanilla ice cream – I don’t recommend putting it on a sandwich or toast.
